Balsamic Cucumber Mini Shell Canapes

Description:
Looking for healthy party snacks to please all your guests? Check out this Balsamic Cucumber Mini Shells Canape recipe.
Ingredients:

  • 2 packages (15 count, each) Athens® Mini Fillo Shells
  • 3 tablespoons golden balsamic vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup red onion, diced
  • 1 1/2 tablespoons dill, chopped
  • 1 1/2 cup seedless cucumbers, 1/4″ dice

Directions:

  1. Preheat oven to 350⁰F. Place empty shells on a baking sheet and bake for 3–5 minutes. Cool.
  2. In a medium bowl, whisk together balsamic vinegar, salt, pepper, onion and dill. Add cucumbers, stir to coat and marinate for at least 1 hour. Strain and discard all liquid from mixture. Fill shells and serve.

    These were the hit of our appetizer tray for Easter dinner. I served them with shrimp cocktail. I wasn’t sure what golden balsamic vinegar was so used the light balsamic dressing that I already had opened and it worked very well. Because I had only 4 people I used only 1 pkg shells, One question I have is that you do not tell me in the nutrifacts what a serving size is other than 14 grams. You can’t expect very many people to think in metric measurements. Usually appetizers are about 3 per serving so I wasn’t sure if a serving was 1 shell or more than that. Next time around I am going to make the Smoked Salmon mini shells. Love the shells!!
