For New Athens 9" x 14" Fillo Sheet Size
Supermarkets across the country now carry a new 1-pound package of Athens fillo
dough that contains two 8-ounce rolls of fillo dough sheets. Previously,
supermarkets carried our Athens or Apollo brand fillo dough with one 16-ounce
roll. Now, two individually wrapped 8-ounce rolls make it easier to thaw and
use 1/2 package of fillo required for many recipes. It also makes it easier to
store 1/2 a box of unopened fillo, which can remain frozen in your freezer for
6 months, or stored in your refrigerator up to 1 month.
The new sheet size in the 8-ounce rolls of Athens Fillo dough are 9" x 14",
exactly half the size of the former 18" x 14" sheet size of Athens fillo dough.
The new 1-pound package of Athens fillo dough contains 40 sheets (each 8-ounce
roll contains 20 sheets), compared to 20 larger sheets in the previous Athens
package.This makes it easy to substitute the new sheet size into existing fillo
recipes.
Here are some helpful tips to make it easier to use the new Athens Fillo sheet
size.

When using an existing fillo dough recipe, keep the number of layers of fillo
the same, and simply use twice the number of fillo sheets specified in the
recipe.

If the recipe calls to cut the fillo sheet in half or strips, remember, that
the new size is already half the size of the larger sheet and will require no
cutting, or less cutting. (The new sheets of fillo fit quite well into the
bottom of a 9" x 13" pan with no cutting.)

If you need a larger sheet size for strudel, simply position two 9" x 14"
sheets next to each other, spray or brush the fillo, and overlap by 1/2" (See
diagram). Or prepare two smaller strudels, using half the amount of
filling in each strudel.
