Thaw one roll of fillo dough, following thawing instructions on package.
Preheat oven to 350ºF.
Unroll and cover the fillo pastry sheets with a damp towel or plastic wrap to prevent drying out.
Grease a 15″x 10″ cookie, jelly roll or baking sheet.
Lightly coat each sheet of fillo with cooking spray as you overlap them on the baking sheet. (Recipe or personal preference may substitute brushing with melted butter or olive oil.) Continue to overlap the fillo to cover the pan until you use all 20 sheets of phyllo in the roll.
Roll fillo edges onto themselves to form the phyllo pizza crusts.
Spray top with cooking spray or lightly brush with olive oil.
Top your phyllo pizza crusts with your favorite ingredients. (If toppings are very moist, like tomatoes or sauces, pre-bake the crust for 3 to 4 minutes before adding toppings.)
Bake about 30 minutes or until the topping is cooked through and the fillo is golden brown.
