Thaw one roll of fillo dough, following thawing instructions on package to make phyllo turnovers.
Preheat oven to 375ºF.
Unroll and cover the phyllo pastry sheets with a damp towel or plastic wrap to prevent drying out.
Place one sheet of fillo on a cutting board and lightly coat with cooking spray. (Recipe or personal preference may substitute brushing with melted butter, olive oil or egg wash.)
Layer and repeat with seven more sheets of fillo.
Trim the layered fillo to form a 7″ x 14″ rectangle. Cut this large rectangle in half to form 2 squares.
Place ½ cup of savory or sweet filling in the center of a fillo square. Fold the fillo in half diagonally to form a large triangle. Press and seal the edges together. Place the turnover on an ungreased baking sheet. Spray the top of the turnover. If you desire added flavor, lightly sprinkle the tops of the turnovers with grated cheese, breadcrumbs, cocoa powder, cinnamon sugar, powdered sugar, etc. Repeat to create four turnovers.
Reroll unused fillo sheets and follow storing instructions on package.
Bake for about 8 minutes or until fillo is golden brown and serve your phyllo turnovers.
