“Plant” assorted berries and fruits in a bed of chocolate pudding — all nestled into a Mini Fillo Shell “pot” — with these fun and easy desserts.

  • 2 kiwi
  • 2/3 cup chocolate pudding
  • 8 chocolate sandwich cookies, crushed
  • 2 packages (15 count each) Athens Mini Fillo Shells
  • Assorted berries
  • Assorted fruits (strawberry, cantaloupe, honey dew, pineapple, mango)

  1. Peel kiwi and slice into small, “leaf-like” strips. Thinly slice other fruits and then cut with mini flower or heart shaped cookie cutters.
  2. In a small bowl, mix together pudding and cookie crumbs. Spoon 1 heaping teaspoon of pudding mixture into each shell.
  3. Insert fruit and berries partially into the pudding mixture to represent sprouting flowers.

For added crispness, preheat oven to 350⁰F. Place empty shells on a baking sheet and bake for 3-5 minutes. Cool and fill.

Mini cookie cutters can be found in most craft and bakery supply stores.
