Looking for Brunch Appetizers to please the whole family? Try these Potato Fritta Breakfast Phyllo Bites

  • 3 packages (15 count ea.) Athens Mini Fillo Shells
  • 1 cup shredded potatoes, frozen or fresh
  • 3 eggs, beaten
  • 3 tablespoons bacon bits
  • 2 tablespoons green onion, finely chopped
  • 5 cherry tomatoes, chopped 
  • 1/4 cup cheddar cheese, shredded 
  • 1/4 cup feta cheese, crumbled 
  • 3 tablespoons sour cream
  • 1/4 teaspoon cumin 
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne


  1. Preheat oven to 350⁰F. In a medium mixing bowl thoroughly combine remaining eleven ingredients. Spoon 1 heaping tablespoon of mixture into each shell. Bake for 12-15 minutes and serve warm.

    I’m moving, and was trying to use up some ingredients. Potatoes and frozen phyllo shells were on that list! As such, I subbed a few things because I really wanted to use what I have, and not buy more. THESE ARE AMAZING, and I’ll make them again, especially for potlucks. I shredded and oven roasted a potato in olive oil, salt, pepper, with dashes of cumin and cayenne. Also threw in some chopped bacon (not bits) again because I’m using them up. Subbed sriracha mayo for sour cream, and Parmesan for the cheddar. Everything else as directed. Fantastic. I’m actively trying not to eat them all right now 🙂
