Looking for Brunch Appetizers to please the whole family? Try these Potato Fritta Breakfast Phyllo Bites

  • 3 packages (15 count ea.) Athens Mini Fillo Shells
  • 1 cup shredded potatoes, frozen or fresh
  • 3 eggs, beaten
  • 3 tablespoons bacon bits
  • 2 tablespoons green onion, finely chopped
  • 5 cherry tomatoes, chopped 
  • 1/4 cup cheddar cheese, shredded 
  • 1/4 cup feta cheese, crumbled 
  • 3 tablespoons sour cream
  • 1/4 teaspoon cumin 
  • 1/4 teaspoon salt
  • 1/8 teaspoon cayenne


  1. Preheat oven to 350⁰F. In a medium mixing bowl thoroughly combine remaining eleven ingredients. Spoon 1 heaping tablespoon of mixture into each shell. Bake for 12-15 minutes and serve warm.
