Super-grain quinoa joins the fresh flavors of tabbouleh in these easy-to-prepare and meat-free Mini Fillo Shell appetizers.
- 1 cup quinoa, cooked
- 2 tablespoons parsley, chopped
- 1 tablespoon mint, chopped
- 1/2 cup cucumber, 1/4″ diced
- 1/2 cup heirloom tomato, 1/4″ diced
- 1/2 lemon, juice and zest
- 1/4 cup Italian dressing
- Salt and pepper, to taste
- 2 packages (15 count, each) Athens Mini Fillo Shells
- In a medium mixing bowl, combine all the ingredients except the mini fillo shells. Allow to set for 15 minutes. Spoon 1 heaping tablespoon of filling into each shell. Serve.
