Description:
Super-grain quinoa joins the fresh flavors of tabbouleh in these easy-to-prepare and meat-free Mini Fillo Shell appetizers.
Ingredients:

  • 1 cup quinoa, cooked
  • 2 tablespoons parsley, chopped
  • 1 tablespoon mint, chopped
  • 1/2 cup cucumber, 1/4″ diced
  • 1/2 cup heirloom tomato, 1/4″ diced
  • 1/2 lemon, juice and zest
  • 1/4 cup Italian dressing
  • Salt and pepper, to taste
  • 2 packages (15 count, each) Athens Mini Fillo Shells

Directions:

  1. In a medium mixing bowl, combine all the ingredients except the mini fillo shells. Allow to set for 15 minutes. Spoon 1 heaping tablespoon of filling into each shell. Serve.
