Veggie Hummus Phyllo Shells for a Crowd

Ingredients:

  • 12 ounces hummus
  • 1 tray (45 each) Athens® Mini Fillo Shells, tomato flavor or taditional
  • 1/2 cup English (seedless) cucumber, halved lengthwise sliced
  • 12 cherry or grape tomatoes, quartered
  • 1/2 cup red onion, sliced

Directions:

  1. Pipe hummus into each mini fillo shell.
  2. Top with cucumbers, tomatoes and onions.
  3. Serve at room temperature.

Tips:
For added crispness, preheat oven to 350⁰F. Place empty shells on a baking sheet and bake for 3-5 minutes. Cool and fill.

There are many flavors of hummus available at grocery stores, so try a variety. Photo show chick pea and edamame hummus.
